Like many other things, the easiest way to avoid disappointment is to make them yourself. Recently, I found an Instagram reel that showed how to prepare bhajia, and it made me feel hopeful and confident about making them myself. In just a few seconds, you’ll feel the same way too.

Since then, it has become a popular street food enjoyed not only in East Africa and India but also internationally. Ingredients

  1. 1 cup flour. 
  2. 1/2 cup water (adjust as needed).
  3. 3 large potatoes, thinly sliced.
  4. 1 green chilli, finely chopped (adjust according to your spice preference).
  5. 1/4 teaspoon red chilli powder.
  6. 1/2 teaspoon turmeric powder.
  7. 1 teaspoon garlic.
  8. 1/2 teaspoon baking soda (optional, for added crispiness).
  9. 1 bunch of fresh coriander leaves, chopped.
  10. Salt to taste.
  11. Oil for deep frying.

Instructions

  1. In a mixing bowl, put together the flour, red chilli powder, turmeric powder, garam masala, garlic, and salt. Mix everything well.
  2. Gradually add water to the dry ingredients and mix until you get a smooth, thick batter.
  3. Add thinly sliced potatoes, green chillies, and chopped coriander leaves to the batter. Mix well, ensuring all the vegetables are coated with the batter.
  4. If you’re using baking soda, add it to the batter and mix.
  5. Heat enough oil in a deep frying pan for deep frying. The oil should be hot but not smoking.
  6. Carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry the bhajias in batches.
  7. Fry the bhajias on medium heat until they turn golden brown and crispy on both sides.
  8. Use a spatula to remove the bhajias from the oil and place them on a plate lined with paper towels to remove excess oil.
  9. Continue frying the remaining batches of bhajias until all the batter is used up.
  10. Serve the hot and crispy bhajias with your favourite sauce and enjoy!
